To qualify for challenges which require one to find 26 caches in a particular area, one beginning with each letter of the alphabet, what is the easiest way of looking for caches beginning with one particular letter, say 'K'?

Use the Advanced Search in the Dashboard. You can fill the location (country, county, region) and "Cache name", while selecting "starts with" on the same row.

Note that this does not work for caches starting with “0”.
Then it is a bug, that should be reported separately.

You could do a simple search of caches around (your home location) - select your radius (searching near - say 30 miles)  select 'caches you havent found' tab and then once the list comes up - click on the  heading 'Geocache name'

This sorts the list alphabetically - you can then look through the list for any local ones for the letters you dont have.  

You may have to click on the sort bit twice and have the list in reverse though (from Z backwards) - as I found that a good number of caches on my list all started with numbers or characters and to get to the point where 'A' was the first letter was a way down the list
