Wie kann ich nach Challenges für fehlende Schwierigkeitsstufen in der Matrix "Schwierigkeitsstufen für Challenges" suchen.

This is not possible, suggested way to fill that grid is to look at other peoples grid and see what challenges they have found for the challenge difficulties you're missing.

It should also be noted that challenge difficulties naturally change over time since they are calculated with an algorithm based on number of logs and number of people that have completed a challenge, they will also be "lost" from archived caches.
