I want to be able to find out what was the longest gap between my log and the previous log on caches I've found.

oh ... it will not reflect your finds only, but the average loneliness. It will most probably be one of them, but there is probably not a tool to mark the one.

Short answer: no

Project-GC does not calculate these gaps because it would take a lot of computing power and it only gives any benefit for some grandfathered challenge caches.

However, using the Lonely Caches tool (as Jakuje suggested) would be a good starting point, telling you which caches you've found are most likely to have long gaps.
