My stats show 363 of 365 yet my current daily streak is 425 days. Any clues?

Stats show I have cached 363 of the last 365 days, yet my current streak is 425. Any clues why?

My assumption would be that you have not yet logged any finds during the last two days. Can that be? In this case, if you have a streak from 28 September 2016 till 26 November 2017 (and have not logged any cache on 27 and 28 November) the statistics created on 28 November will show exactly this. For the streak of course days longer back than one year will be counted (but not for finds in the last 365 days) and days after the last find up till the day the statistics are calculated are ignored.

Actually I have logged the last two days, my stats show as of 11/27/2017 and the number of finds matches what is on geocaching.com currently.

The day the statistics are generated (today), you did not log a cache yet (at the time of statistics generation) and therefore it is showing 364/365 (now, at the time of writing the answer):

You had one less, as k+gw+a already mentioned, that the statistics were generated before you logged 26th and 27th November or so.

There is no simple way around it -- PGC does not know by the time of statistics generation if you did not log the cache from today yet or you just did not find a cache this day. If these stats would be generated "always from yesterday", others would be wondering why they have longer streak than the amount of caches in last 365 days and why today is not counted for this stats.
