This year at the mega in victoria Australia I went for and got 12 cache types I a day. I was over the moon.  Not being a paid member of projectgc yet, I had to wait seven days for my stats to update. When my stats updated I only had 11 cache types in a day. After talking to several people they told me that the lab caches I logged between 0600 and 1200 local time were converted to Seattle local time. How do I get this changed to reflect the hard work that i did with getting 12 cache types I a day.

I think you'll have to take it up with Groundspeak. Project-GC just uses the information provided by their API.

The news from 2017-11-21 say 

For our paying members we have now also added the lab cache data into the statistics themselves, for example for Most cache types in a day

So I don't think you will see the lab caches there unless you will become paying members.

What I actually want to know is how do I get the stats changed in my geocaching.com and project go stats. So I become a paid member of projected.cthats the only way. So what happens when and if my membership runs out?
When the membership expires, the lab caches will be removed from the Profile stats again, at least as it works today. We don't yet know how it will work a year from now.

It should also be known that there are a timezone issue with lab caches where they sometimes end up on the wrong date. We are waiting for HQ to help us resolve this issue.
