I was just wondering if it was worth setting up dummy "checkers" for uncheckable and non-challenge caches, so that a tagger/script writer can look at the challenge map and pick out caches marked as having no checkers to action.

I ask because I've been looking at the Australian challenge caches map and keep on clicking on the same non-challenges or uncheckable challenges (e.g., animal names in the cache name). If I was able to tag these caches as essentially ignorable, I could concentrate on the real challenges.

We don't recommend that "solution". There are plans for a system where users can (somehow) vote for challenges to be non-challenges, fundamentally uncheckable or uncheckable with the current set of checker API functions.
