This might not be possible (the info might not be in the API), but there's times where I'd like to see who is watching a cache - especialy my own. Is it possible to implement something to do this?

On a related note, is it possible to add a 'Top Watched Caches' page, so that caches can be sorted by amount of people watching them? I often find that interesting caches get a lot of watchers, but at the moment I don't think it's possible to identify those.

No. This information is not publicly available on geocaching website and therefore it would be really weird if it would appear in API. Maximum you can get is probably the "top watched caches" as you propose, if this information is in API.
If you are a premium member on geocaching.com, you could edit your caches as premium member only-caches. Then you get the option to see the audit-log. In that log you can see, who looked at the listing, and when for the last time.
Thanks, yes, I'm aware of that, but I was wondering about the 'watch' list, rather than who has visited the cache.

No, it's not possible. The data does not exist in the API.
