I know a lot caches that say ... 3 countries in one day, 4 countries in one day, 5 countries in one day ... what about that

No; that is still time limited. Anything that takes the form “accomplish X within time frame Y” is time limited.

Also, remember that there is no precedent for hiding caches. This means that just because someone else has this Challenge, it does not mean that it is publishable anymore.
